Balsamic Steak Roll Ups

  Roll into Summer with this knockout recipe!


Total Time: 30 minutes
Yields: 8 servings

• 8 thin slices of sirloin or flank steak
• Virgin Olive Oil
• Salt
• Pepper
• Fresh Rosemary
• 1 red bell pepper, sliced
• 1 green bell pepper, sliced
• 1 medium zucchini, sliced
• 1/2 medium onion, sliced

• Virgin Olive Oil
• 1 large garlic clove, minced
• . cup balsamic vinegar
• 2 tbsp. red wine
• 2 tsp. brown sugar
• Fresh Rosemary

1. Heat olive oil in a skillet on medium-high heat. Cook all vegetables until tender. Garnish with salt and pepper.
2. For Balsamic Glaze, heat olive oil in a saucepan over medium high heat. Add garlic and cook for 1 minute. Add in balsamic vinegar, red wine, brown sugar, and rosemary sprigs. Bring to boil for 5 minutes, then let simmer for 15 minutes.
3. Rub each side of steak slices with olive oil. Sprinkle with salt, pepper and rosemary. Place cooked veggies on a steak roll vertically. Roll up and pin with a toothpick. Repeat until all steak pieces are rolled.
4. Grill steak rolls on a skillet on high heat for about 2 minutes each side (or until desired doneness.) Serve immediately, and garnish with Rosemary Balsamic Glaze.
