Salt & Vinegar Chickpeas
Total Time: 45 minutes with prep
Yields: 2 servings, serving size = 1 cup
WHAT YOU WILL NEED:
• 1 Tbsp Olive Oil
• 2 cans of chickpeas
• 1⁄4 cup of Red Wine Vinegar
• Salt (to taste)
1. Rinse chickpeas and preheat oven to 400°F.
2. Toss chickpeas with 1 Tbsp olive oil and a pinch of salt. Roast for 25-30 minutes, stirring as needed.
3. Pour 1⁄4 cup of red wine vinegar over chickpeas, add more salt. Place back in oven for 10-15 minutes, or until crispy.
