Vinegar Tips Spring Feta Salad Recipe

Spring Feta Salad

PREP TIME: 15 mins
YEILD: 4 servings

INGREDIENTS:
  1½ cups of cherry tomatoes, halved
  1 peeled cucumber, diced
  1 avocado, diced
  4 oz. feta cheese, cubed
  2 Tbsp. red onion, minced
  2 Tbsp. parsley, minced
  2 Tbsp. olive oil
  1 Tbsp. red wine vinegar
  Salt and pepper to taste

DIRECTIONS:
1. Peel one cucumber and dice. Add to mixing bowl.
2. Cut cherry tomatoes and add to bowl.
3. Remove pit and dice avocado. Add to bowl.
4. Add minced red onion and parsley.
5. Add feta cheese.
6. In a separate bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
7. Pour dressing over the salad.
8. Toss gently.
9. Serve and enjoy!

**Makes great leftovers!**
